Radicchio, Pomegranate & Black Bean Salad
Adding pulses to salads makes them a little more substantial than those we might crave when the weather is warmer. This salad is packed with phytonutrients, fibre, protein and a delicious combination of bitter radicchio and sweet pomegranate. Combine the following in a generous sized salad bowl, toss and enjoy!
Serves 2 as a main course and 4 as a side dish
Ingredients
380g carton of black beans
Seeds from 1 pomegranate
8 radicchio leaves roughly chopped
A good handful of mixed salad leaves e.g. baby spinach, rocket, lamb’s lettuce
8 cherry tomatoes
8 pitted black olives
Small bunch of flat leaf parsley roughly chopped
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
Salt and pepper to taste
Optional extra: hard boiled eggs, quartered
