Frittata Style Omelette
This frittata style omelette is so simple to make and is delicious hot as a protein-packed breakfast, or eaten cold for a packed lunch.
You can experiment with the combination of vegetables. Include a rocket salad on the side or sprinkle some sprouted mung beans on top to add in even more nutritious goodies.
- 1 medium onion or small leek finely chopped
- 1 sliced courgette
- 1/2 red pepper chopped
- Handful of mushrooms sliced
- 4 eggs
- 50g feta cheese crumbled
- Handful of chopped mixed herbs such as parsley, chives and oregano
- Salt and pepper to taste
Heat 1/2 tbsp olive oil in frying pan that can go under the grill.
With a lid on the pan, gently cook the onion until soft and translucent.
Add peppers, followed by courgettes and lastly mushrooms.
Cook until soft.
Crumble the feta on top of the vegetable mixture, followed by the beaten eggs.
Allow to cook for a few minutes and then pop under a pre-heated grill to finish.
